Does the iphone work like an ipod touch after the subscription is expired?

I am interested in getting an iphone and I was wondering if after 2 years when there are newer and better cellphones to have, would it still be possible to operate the iphone as an ipod touch type device (like for playing movies and mp3s) without having a subscription plan?
