How can I restore all of my iphone settings from a backup without restoring the firmware?

I jailbroke my iphone 3g, which was running firmware 3.1, in the process of which I lost all of pictures, contacts, apps, etc. But these are all saved in a backup file. However I think that if i restore the iphone normally it will overwrite the firmware and it won’t be jailbroken anymore. Is there any way that I can restore it from backup without restoring the firmware?
Does that make sense?

    Hi the backup is not related to the os you are running if you have on itunes the files from the 3.0 and now upgraded to 3.1 simply sync and all the files will be there again.
